Structure and principle
This type of oven usually has a multi-layer (deck) structure, usually with 2-3 layers. Each floor has its own heating system. In the case of electric heating, heat is generated by heating elements such as heating tubes. Heating pipes are generally installed at the top and bottom of the oven, and when an electric current is passed through the heating pipe, the resistance of the heating pipe causes it to heat up, which in turn radiates heat into the space inside the oven. In the gas heating mode, heat is generated by burning gas such as natural gas or propane. The flame created by the combustion heats the air inside the oven and parts such as the baking sheet.
The heat is transferred inside the oven in three ways: convection, radiation, and conduction. Convection refers to the circulating flow of hot air inside the oven, bringing heat to all surfaces of the bread; Radiation is the heat radiation emitted by the heating element or flame acting directly on the surface of the bread; Conduction is when the baking pan absorbs heat and transfers it to the bottom of the bread that comes into contact with the baking sheet.
Application in baking
Bread baking: It can be used to bake a variety of breads, such as baguettes. Baguettes need to be baked at high temperatures, and this oven can quickly raise the internal temperature to around 230 - 260 degrees Celsius. Due to its multi-layer structure, multiple baguettes can be roasted at the same time, improving baking efficiency. Moreover, the layer oven can make the bread heat more evenly during the baking process, so that the outer skin of the bread is crispy, and the internal tissue is soft and elastic.
Pastry baking: Pastries like egg tarts, Danish bread, etc., can also be baked in this oven. Take the egg tart as an example, after putting the egg tart in the oven, by adjusting the temperature of the upper and lower heating, the tart skin can be crispy, the tart liquid will solidify, and the surface will have beautiful burnt spots. Generally, the lower layer temperature can be set to 180 - 200 degrees Celsius, and the upper layer is slightly warmer, around 200 - 220 degrees Celsius, which allows the surface of the tart liquid to quickly form a caramel color.
